摘要
对精制玉米蛋白粉包埋DHA(docosaheraenoicacid)进行单因素试验,得出鱼油粉末化较为理想的乳化液工艺参数,乳化剂的HLB值大于9.6,添加量1.5%~2.5%,乳化温度60~80℃,水分的添加量70%~75%,比较理想的DHA和精制玉米蛋白粉的比例为1∶(3~5)。
By means of elaborated single-factor analysis the processing parameters for powdered DHA production by microencapsulation with refined maize protein have been decided. The results show that the satisfactory parameters are: DHA:refined maize protein powder=1∶3~5,1.5%~2.5% emulsifier with a HLB value higher than 9.6,70%~75% water and emulsification at 60~80℃.
