气调包装中双孢蘑菇的护色及湿度调节研究

摘要 研究了15℃时,0.3%CaCl2、0.6%NaCl、0.1%焦亚硫酸钠和清水浸泡处理对气调包装(8%O2/10%CO2/82%N2)中蘑菇的护色效果,并分别采用山梨醇、NaCl作吸湿剂来调节气调包装内的相对湿度。实验结果表明:①0.3%CaCl2替代常用的0.1%焦亚硫酸钠浸泡处理方法,护色效果较好;②气调包装内采用山梨醇作吸湿剂能比NaCl产生较低的相对湿度(4天内:80%-92%)。但NaCl的吸湿速率比山梨醇大。 The color fixation of 0.3% CaCl2,0.6% NaCl,0. 1% sodium metabisulfite and water on mushrooms in modified atmosphere packaging(8%O2/10%CO2/82%N2)were studied at 15℃. Sorbitol and sodium chloride were used respectively to modify the relative humidity in MAP. The results indicated that:①mushrooms infused with 0.3% CaCl2 had better color than those usually with 0.1% sodium metabisulfite. ②the lower relative humidity (80% - 92% within four days) was observed in MAP with sorbitol as moisture absorber than that with sodium chloride. But sodium chloride absorbs moisture more quickly than sorbitol does.
