对镇远陈年道菜的营养成分、质地、防腐保藏性、色香味的形成及卫生指标进行了初步分析和研究,为进一步提高产品质量和数量提供了必要的依据。
The paper describes many fields about Zhenyuan mellow pickled vegetable, including the content of nutrition, character preservation the form of colour, fragrance, flavour andin dices of hygiene. It will provide necessary basis for improving quantities and quality of products.
