摘要
以山东推广种植的 2 0个小麦品种为材料 ,采用两种蛋白质分离方法 ,研究了不同分离方法所得蛋白组分及Wx蛋白与面条品质的关系。结果表明 ,正丙醇分离所得蛋白组分的 5个指标及SDS分离所得蛋白组分SDS GMP(SDS不溶性谷蛋白大聚合体 )与面条评分显著或极显著正相关。Wx蛋白亚基的含量与面条评分呈极显著负相关。建立了面条评分依照SDS GMP和WxA1+WxB1+WxD1含量的多元逐步回归方程 (r=0 84 ) ,提出SDS GMP和WxA1+WxB1+WxD1含量可以作为面条小麦的选种指标。
Using 20 wheat cultivars from Shandong Province, the relationships between protein fractions, the Wx protein and noodle quality were studied respectively. The results showed that the correlation between the protein fractions by 1-propanol isolation method noodle scores was significant; the correlation between SDS-GMP and noodle quality was highly significant; the noodle quality was highly significantly negatively correlated with the absolute content of Wx protein. Further the multiple reduced regression equation for noodle quality according to SDS-GMP and WxA1+WxB1+WxD1 was established(r=0.84). SDS-GMP and WxA1+WxB1+WxD1 content can be used as the indexes in the selection of noodle wheat cultivars.
