The great scale production of the wet raw noodles was discussed. The favorable wet raw noodles in China need to be produced and be packaged properly by equipments instead of by hand. Based on the investigation of the processes and equipments of the instant noodles and fine dried noodles, as well as the developing situations of food staff cold chain at home, the conclusion was made that it is imperative under the situation to produce the wet raw noodles with equipments in great scale.
