摘要
主要讨论生湿鲜面条工业化、规模化生产问题。通过调查研究,从面条的生产工艺与设备、食品"冷链"形成等方面,论证了生湿鲜面条规模化生产的市场条件业已经成熟,分析其潜在的社会效益和经济效益,并提出了技术开发的初步思路。
The great scale production of the wet raw noodles was discussed. The favorable wet raw noodles in China need to be produced and be packaged properly by equipments instead of by hand. Based on the investigation of the processes and equipments of the instant noodles and fine dried noodles, as well as the developing situations of food staff cold chain at home, the conclusion was made that it is imperative under the situation to produce the wet raw noodles with equipments in great scale.
