The Nutritive Value of Different Strains of Cabbage Mustard

摘要 对6个不同芥蓝品种营养成分进行了分析和评价。东方大叶芥蓝(鲜样)Vc的含量最高,达1.14mg/g,最低的为中迟登峰芥蓝,含量为0.72mg/g。β-胡萝卜素的含量,以中花芥蓝的含量最高,为0.01mg/g。芥蓝粗纤维、蛋白质的含量较低,但含有较丰富的矿物质和微量元素。芥蓝中可溶性糖以葡萄糖为主,果糖次之,蔗糖最少。根据平均营养价值评估方法对6个芥蓝品种进行营养评价结果,营养价值最高的为香港百花芥蓝和中花芥蓝,营养价值最低的为中迟登峰芥蓝。由于平均ANV值为6.52,芥蓝属于营养价值较高的蔬菜。 This article analysed the nutritive value of six different strains of cabbage mustard. The content of Vc of Eastern Big leaf cabbage mustard is the highest among the six strains, reaching 1.14 mg/g(fresh weight), and Zhongchidengfeng cabbage mustard had the lowest Vc content ,which is 0.72 mg/g(fresh weight). Zhonghua cabbage mustard has the highest β-carotene content, that is 0.01 mg/g(fresh weight).Cabbage mustard had the lower crude fiber and protein content, but it is abundant in minerals and trace elements. Glucose gives first place to the content of soluble sugars of cabbage mustard. Fructose takes second place and cane sugar is the last. According to the result of evaluating the average nourishment value of the six species of cabbage mustard, Hongkangbaihua Cabbage mustard and Zhonghua Cabbage has the highest nutritive value, and Zhongchidengfeng Cabbage mustard has the lowest. In conclusion, Cabbage mustard is one kind of good nutritious vegetables, because the average value of ANV is 6.52.
