摘要
昆虫是一种重要的生物资源,它含有丰富的蛋白质、脂肪、矿物质、维生素等,营养价值高,是理想的食品资源;昆虫还能制成多种功能食品,而功能食品又是当今食品领域的研究热点。昆虫生物量巨大,开发利用食用昆虫前景广阔。
Insects are a kind of important biological resources containing abundant protein, fat, mineral materials, vitamins and so on. They are ideal food resources with high nutritional value. Insects can be used to produce multifunctional food which is exactly the hot point of research work in current food field. Just because of the abundance of insect organisms a broad prospect could be predicted for the development and utilization of edible insects.
