摘要
随着社会的发展以及现代文明病的出现,人们愈来愈重视天然保健食品的开发与应用。现代食品加工技术已经为天然营养保健糙米食品的开发与生产奠定了基础。因此从分析精白米的营养缺陷、糙米食品的营养保健功能入手,对新型天然营养保健糙米食品的开发与生产工艺、产品特点及发展前景进行了论述。
Four aspects are discussed in this paper, including the nutrition deficiency of polished rice, the nutritional and health functions of brown rice foods, the exploitation and processing technology as well as the characteristics of the new nutritional and health brown-rice foods and their developing prospects.
