嗜酸乳杆菌ZH-1在复原脱脂奶中的生长和存活模式

摘要 研究了嗜酸乳杆菌ZH-1在复原脱脂奶中的生长和存活模式。在不同温度下嗜酸乳杆菌ZH-1在复原脱脂乳中的生长遵循Bolzman模型;在不同贮藏温度和pH下,嗜酸乳杆菌ZH-1遵循对数死亡规律,在4℃、10℃和15℃下的死亡速率常数分别是8.21、4.31和2.86;在pH6.8、6.0和5.0条件下的死亡速率常数为175、53和17。温度是影响存活的主要因素;在实验条件下pH值对嗜酸乳杆菌ZH-1的存活影响不大。 The growth pattern of Lactobacillus acidophilus ZH-1 in reconstituted skim milk (RSM) and the survival model of which under different temperatures and pHs during storage were studied. It showed that the growth pattern conformed to the Bolzman model; while the survival model abided by a logarithmic death law: under the initial viable cell counts of 10' CFU/mL, the death rate constant were 8.21, 4.31, 2.86 under 4, 10, 15℃, and 175, 53, 17 under pH 6.8, 6.0, 5.0. Temperature was a major factor that affected the survival, but pH didn't affeel so much as temperature.
