摘要
用分光光度法以酪氨酸为其褐变底物,研究了马铃薯中多酚氧化酶(PPO)的特性,结果表明,PPO作用产物的最大吸收波长为480nm,最适温度为25℃,最适pH为6.5,在此条件下用0.15mmol·L-1浓度的PPO的非竞争性抑制剂就可以完全抑制PPO的酶活力。
Spectrophotometer method was applied in our experiment to study the characters of PPO in potato. When tyrosine was enzyme browing substrates,the result showed that absorptive wavelength of product was 480 nm,the optimum temperature was 25 ℃,the proper pH was 6.5. In these circumstances PPO activities were almost inhibited by 0.15 mmol·L-1 inhibitor.
