红茶菌在绿茶甘蔗汁培养液中培养条件的研究

Study on Culture Conditions of Tea Fungus in Green Tea-Sugarcane Juice Culture Fluid

通过对红茶菌在绿茶 甘蔗汁培养液中生长过程的观察与测定,探讨了培养液的组成、温度、供氧方式、培养时间等因素对该菌生长的影响,得出了较佳的培养液配方为0.5%绿茶+40%甘蔗汁+1%鸡蛋清,较佳的培养条件为:pH自然,10层纱布封口,30℃静置培养7天.实验结果表明:在红茶菌培养液中用天然甘蔗汁代替蔗糖,用绿茶代替红茶,能明显增加菌膜厚度和菌液清香味.

This paper studied the effect of the composition ,temperature, oxygen supply and cultivation time on the growth of black tea fungus. By observing and testing the growth process of black tea fungus in juices compose of a mixture of green tea and sugar cane juice. The best formulation for its culture medium contains 0.5%green tea ,40% sugar cane juice and 1% egg white. The best cultivation condition is at natural pH ,30℃ static condition and with the cultivation medium wrapped in 10 layers of bandage. The experimental results showed that by replacing sucrose with natural sugar cane juice and by replacing black tea with green tea in the cultivation media, there were obvious increases in the tea fungus film thicken and an obvious improvement in the fragrant of the fungus cultivate fluid.
