摘要
本文根据中式餐饮食品生产的特点,提出加强对食品采购、贮存、初加工、烹调加工和餐饮具清洁、消毒等的卫生管理,以及加强对餐饮从业人员个人卫生和操作规范的监督管理,以提高中式餐饮食品的卫生质量。
In accordance with the nature of Chinese-style food production, this paper proposes an en-hanced hygiene management in food purchasing, storage, processing, as well as the cleansing and sanita-tion of cooking equipments and utensils. The paper also points out that the supervising and managing ofthe operation standards of catering staff should also be improved for bettering the hygiene quality of Chinese-style food.
