总结了家蚕BombyxmoriL .蛹的蛋白质、脂肪酸和几丁质等营养成分含量及其特点。系统介绍了家蚕蛹蛋白、脂肪酸和几丁质等成分的提取技术和相关生产工艺。概述了家蚕蛹作为保健食品与饲料原料开发状况和食用安全性。并对家蚕蛹营养成分利用与产品开发前景进行了展望。
In this paper, the nutrition value of pupae of silk worm Bombyx mori L. and its exploitation are discussed. It is mainly reviewed on four aspects: the contents and characteristics of protein, fat and chitin of silk worm pupae; extracting and processing technology of the protein, fat acids and chitin from silk worm pupae; the relative exploitation of silk worm pupae as a source for nutritional foods and feeds and its safety for food.
