摘要
本文研究了葡萄皮紫色素的可见吸收光谱、光稳定性、热稳定性、耐氧化性、耐糖性及金属离子对色素稳定性的影响。结果表明:葡萄皮紫色素色质优良,有广阔的开发应用前景。
The visible absorption spectrum, light fastness, thermal stability, oxidation reduction resistance of anthocyanin grape purple pigment were studied. At same time,metalic ions effect, such as Na^+, Cu~2+, Fe~3+,Ca^(2+),Zn^(2+),Mg^(2+) on stability of purple pigment were discussed. The results showed that, the extracted anthocyanin pigment from grape peel ,has the properties of high profits, low cost and controllable quality, and has the good future.
