摘要
目的 研究检测食品中致癌物丙烯酰胺的固相萃取 -高效液相色谱测定方法。方法 用水提取食品中丙烯酰胺 ,采用固相萃取小柱对样品液进行纯化 ,以二极管阵列高效液相色谱法测定其含量。结果 方法检出限为 10ng/g ,回收率在大于 95 %之间 ,精密度为 5 3 4% (低浓度 )、3 40 % (中等浓度 )和 4 3 0 % (高浓度 )。满足了我国“十五”国家重大科技专项“食品安全关键技术”课题有关建立食品中丙烯酰胺测定方法要求。结论 建立的方法测定食品中丙烯酰胺满足痕量分析要求 ,并具有操作简单、干扰少、快速、准确可靠等特点 。
To study the method of solid phase extraction and high performance liquid chromatography in determining acrylamide in food. The acrylamide in food was extracted with water and purified with solid phase extraction, and then diode array high performance liquid chromatography was used to determine its content. The detection limit of this method was 10 ng/g, the recovery rate was higher than 95%, accuracy rate was 5.34% (low concentration), 3.40% (moderate concentration) and 4.30% (high concentration) respectively. [Conclusion] This method meets the national requirement. It is easy to operate, rapid, accurate with little disturbance. It can be used in determining acrylamide in food.
