摘要
分析了有关文章对唾液淀粉酶最适温度质疑的依据的不可靠性并指出有关的实验不能说明唾液淀粉酶具耐高温的特性。
The paper analyses the incredibilities of the reasonings in some papers for questioning about the optimal temperature of saliva amylase and points out that the related experimental results cannot determine that saliva amylase can endure high temperature.
