摘要 目的 :了解食品中沙门氏菌的污染情况和耐药水平。方法 :根据 GB4 789.4 - 94进行沙门氏菌的分离鉴定 ,用K- B法测定沙门氏菌的耐药性。结果 :从 72 0份生肉类食品中分离到 6 9株沙门氏菌 ,分离率为 9.5 8%。 88.6 %的沙门氏菌对 1种以上抗生素耐药 ,34.77%的对 5种及 5种以上抗生素耐药 ,4株对 11种抗生素耐药。结论 :该地区生肉食品中沙门氏菌的污染率和耐药性较高 ,应限制抗生素在食源性动物饲养过程中的应用 ,加强食品卫生的监督和管理。 Objective:To investigate the contamination status of Salmonella spp.in raw meat samples in Shenzhen,and the antibiotic resistance of Salmonella spp.isolates.Methods:Salmonella spp.strains were isolated and idenfified according to the National Standard Methods for Food-related Bacteria Detection,and the antimicrobial susceptibility of the 50 isolates to the 19 antibiotics was determined by the Kirby-Bauer method according to the Petfotmance Standards for Anti-microbia 1 Susceptibility Testing(2001) recommended by NCCLS.Results:69 Slamonella spp.strains were isolated from 720 raw meat samples,and the isolation rate was 9.58%.88.6% of the isolates were resistant to one or more antibiotics;34.77% of the isolates were resistant 5 or more antibiotics.4 isolates with the highest level of antibiotic resistance were resistant to 11 of the 19 tested antibiotics.The isolates were highly resistant to Tetracycline(52.2%),Sulfonamides(49.3%),and Streptomycin(31.9%),even to sulfamethoxazole-trimethoprim(34.8%) and Ampicillin(31.9%),which were always used in clinical.Conclusion:The results indicate that the food safty of Shenzhen is potentially at risk,and the govetnment office should reinforce their survey to prevent the outbreak or sporadic occur of foodborne disease caused by Salmonella spp.strains.And it is necessary to restrict the use of antimicrobial agents in animals bred as a food source for humans,both the veterinary use and the use as feed additives for growth promotion.
