Research and application of yeast extract special for chicken bouillon

酵母抽提物(又称酵母味素、酵母精,英文名称为Yeast extract)是以蛋白质含量丰富的食用酵母为原料,采用生物技术,将酵母细胞内的蛋白质、核酸等进行降解后精制而成的天然调味料.

The processing of a type of yeast extract special for chicken bouillon was introduced in this paper. The effects of application in chicken bouillon were studied. The results showed that the yeast extract special for chicken bouillon would be an excellent material to increase the content of other nitrogen and raise the flavour of chicken bouillon.
