摘要
番薯紫色素为水溶性天然色素,属花色苷类化合物。本文研究了番薯紫色素的提取及大孔吸附树脂精制的方法,以及番薯紫色素的稳定性。结果表明,提取番薯紫色素的最佳条件为:物料比为1:20,提取剂为85:15的酸化水,提取温度为50℃,提取时间为60min;番薯紫色素对热、光、金属离子等均有较好的稳定性。
The extraction、refining and stability of purple sweet potato pigment was studied. According to the results, the optimum extracting condition was that sweet potato(g): extraction agent(ml) was 1:20, and water: 1mol/l hydrochloric acid was 85:15 with the temperature at 50 for 60 min. Purple sweet potato pigments were stable when they were exposed to the light, high temperature and metal ion.
