The article introduced the properties of Plan; Gum and its application in food industry such as Arabic Gum, Knojac, Tragacanth Gum and so on. Plant Gum was a kind of high - quality functional food additive and sources of soluble fiber. Therefore, there was important practical value in the research on Plant Gum.
