摘要
以脱脂大豆粉为原料,采用中性酶水解制取大豆多肽;同时采用正交试验方法,探讨了中性酶水解的最佳条件,用薄层色谱法对产品进行初学的鉴定。
In this article soybean polypeptide is prepared by hydrolysis reaction by use of neutral protease from defatted soybean. The optimum conditions of hydrolysis were ascertained by the use of orthogonal test. The product is proved by Thin Layer Chromatography.
