摘要
对低温贮藏过程中冷害发生的机理以及间隙升温处理能降低果蔬贮藏冷害的原因进行了论述,并阐述了如何进行间隙升温处理及其存在的一些需要解决的问题。
The mechanism of chilling injury and why the intermittent warming treatment can decrease chilling injury were discussed. Furthermore, this paper introduced how to treat fruits and vegetable with intermittent warming(IW) and pointed out some problems in applying IW.
