综述了近年来红曲及其活性物质在食品、药品等方面的研究状况 ,特别指出红曲中桔霉素 (Citrinin)
The paper introduces research advance of Red Koji and its bioactive substances in food and medicine.It is espeacially indicated that some of the Monascus could produce a fungi toxin-citrinin.
