摘要
用溶剂法提取菠萝蜜中的香气成分,用GC-MS联用技术鉴定了82个化合物,占香气成分总量的94.66%,主要为脂肪酸类以及酯类、醇类、烷氧基烷烃类和酮类物质,主要成分为亚油酸(24.10%),棕榈酸(15.72%)和油酸(6.16%)。
Aroma extract from the fruits of Artocarpus heterophyllus was obtained by solvent extraction. Eighty-two compounds in the extract were identified by means of GC-MS technique. The content of these compounds makes up 94.66 % of the total components, which include fatty acids, esters, alcohols, alkoxy alkanes and ketones. The main constituents are linoleic acid (24.10 %), palmitic acid (15.72 %) and oleic acid (6.16 %).
