摘要
对冻肉通电加热解冻的方法进行了试验研究 ,给出了通电加热解冻的机理。测定了一些参数 ,如电导率、导热性和热扩散系数等。另外 ,通过对冻肉不同部位的温度测量 ,得出了温度场在解冻时的分布规律 ,并对能量利用率进行了简要的描述。
The ohmic heating thawing method through the exper im entation with the measuring of conductivity,thermal conductivity, thermal diffus ion coefficient, the temperature of the frozen meat were studied. The distributi ng discipl in of the temperature, the using ratio of electric energy were introduced.
