摘要
对生姜中抗氧化成分提取的方法与工艺条件进行了探讨;对提取物在植物油和富脂食品中的抗氧化保鲜作用进行了应用研究。
The methods and technological conditions for the extraction of anti-oxidative components from ginger were studied. Application researches on the anti-oxidative and preservative effects of the extracts on vegetable oils and high-fat food were carried out.
