全鸡废渣提取蛋白质的营养功效评价

摘要 全鸡废渣经特定工艺提取,制成含18种氨基酸的鸡水解蛋白,其氨基酸组分与市售进口某名牌纯鸡精类同,含牛磺酸0.1%。经蛋白质营养功效研究,结果表明,鸡水解蛋白对大鼠身长、体重、饲料效价(FE)、蛋白质功效比值(PER)、肝总氮和肝脏含氮率指标方面均显著高于对照组,对性器官(睾丸)发育无刺激作用,有提高正常大鼠血红蛋白含量的趋势。揭示这种鸡水解蛋白能提高蛋白质利用率,增加氮贮留,促进幼年大鼠生长发育,有较好的营养效应。 There were eighteen amino acids of the hydro - protein of chicken, which had extracted by a special method from the waste residue of the whole chicken.' The component of amino acid was compared with a famous import essence chicken product, the result was almost the same. Except these, it contained 0.1% Taurine. The effects of protein had been studied in animal.' The results were showed: for the body height, body weight, FE, PER, hepatic total nitrogen, and index of content nitrogen rate of liver of rats, were better than the control group. The results suggested, (1) the hydro - protein of chicken had increased the portein in the utilization rate, and (2) retention of the nitrogen, (3) there was an increased content of hemoglobin, thereford, there are better Nutritional effect in the rat growth.
