全鸡废渣提取蛋白质的营养功效评价

全鸡废渣经特定工艺提取,制成含18种氨基酸的鸡水解蛋白,其氨基酸组分与市售进口某名牌纯鸡精类同,含牛磺酸0.1％。经蛋白质营养功效研究,结果表明,鸡水解蛋白对大鼠身长、体重、饲料效价(FE)、蛋白质功效比值(PER)、肝总氮和肝脏含氮率指标方面均显著高于对照组,对性器官(睾丸)发育无刺激作用,有提高正常大鼠血红蛋白含量的趋势。揭示这种鸡水解蛋白能提高蛋白质利用率,增加氮贮留,促进幼年大鼠生长发育,有较好的营养效应。
