摘要
主要探讨了鲜牛乳中乳糖的低温水解。试验表明生奶中加入 0 .15U/kg的乳糖酶 ,在 5℃、水解 18h ,可使生鲜牛乳中的乳糖降解 5 5 %左右 ,从而可以克服乳糖不耐症的问题。
The hydrolyzing of milk at low temperature was studied and the result showed that the lactose amount in milk was reduced to 55% by adding 0.15 U/kg lactose, at 5 ℃ for 18 h. So it could get over the maladjustment on lactose.
