摘要
同种鱼不同组织 ,蛋白酶和淀粉酶最适温度相同 ,且淡水白鲳、团头鲂、黄颡鱼淀粉酶和蛋白酶的最适温度分别为 2 5℃、35℃、2 5℃和 4 5℃、5 0℃、5 0℃。淡水白鲳和团头鲂淀粉酶的最适pH值均为 6 .4。黄颡鱼肝胰脏、肠、胃最适pH值分别为 6 .8、6 .8、6 .4。淡水白鲳和黄颡鱼蛋白酶最适pH值依胃、肠、肝胰脏分别为 2 .6、8.0、10 .0和 4 .2、8.0、10 .0。团头鲂蛋白酶最适pH值依肠、肝胰脏分别为 8.0、9.4。同种鱼不同组织淀粉酶均以肝胰脏活性最高 ,且 3种鱼顺序为 :团头鲂 >淡水白鲳 >黄颡鱼 ;同种鱼不同组织蛋白酶活性顺序为 :胃 >肠 >肝胰脏 ,3种鱼蛋白酶活性顺序为 :淡水白鲳 >黄颡鱼 >
The optimum temperatures of diastase activity and protease activity of the same fish with different organs are the same, and the optimum temperatures of diastase activity and protease activity in Colossoma Brachypomum, Niejalobrama Amblycep and Psetidobagrus Fuvidraco are 25° C, 35° C, 25°C and 45° C, 50° C, 50° C respectively. The optimum pH values of diastase activity in Colossoma Brachypomum and Niejalobrama Amblycep are both 6.4. The optimum pH values of the hepatopancreas, intestine and stomach in Psetidobagrus Fuvidraco are 6.8, 6.8 and 6.4. The optimum pH values of the proteases of the stomach, intestine and hepatopancreas in Niejalobrama Amblycep and Psetidobagrus Fuvidraco are 2.6, 8.0, 10.0 and 4.2, 8.0, 10.0 respectively. The optimum pH values of the proteases of the intestine and hepatopancreas in Colossoma Brachypomum are 8.0, 9.4. In different organs of the same fish, the diastase activity of hepatopancreas is the highest. The diastase activity sequence is Colossoma Brachypomum>Niejalobrama Amblycep> Psetidobagrus Fuvidraco. The sequence of activity of protease of different organs in the same fish is Niejalobrama Amblycep > Colossoma Brachypomum > Psetidobagrus Fuvidraco.
