摘要
为指导面粉企业对过氧化苯甲酰添加量控制,保证产品质量,该文测定20组小麦粉中过氧化苯甲酰含量及其白度值,论证两者之间关系。结果表明,小麦粉中过氧化苯甲酰含量与测定小麦粉白度值没有相关性,运用白度值控制产品中过氧化苯甲酰添加量是不可取方法。
In order to direct the flour plants to acid benzoyl peroxide content and control the quality
of the flour, this article assayed benzoyl peroxide content and whiteness value of 20 flour samples,
and analyst the relation of them. The results showed that there is no correlation between benzoyl
peroxide content and whiteness value, and it is not available to add benzoyi peroxide content by as-
saying whiteness of samples.
