“万宝一号”黑米中铁的相对生物利用率研究

摘要 为了评价“万宝一号”黑米中铁的可利用程度,本文采用动物血红蛋白恢复实验法,研究了黑米铁的相对生物利用率。将贫血模型复制成功的大鼠,分为A、B、C、D、E、F和G七组。A组喂低铁基础饲料,作为阴性对照组;B、C、D三组,在低铁基础饲料上,分别加铁(FesO_4·7H_2O)6、12、24 mg/kg,作为阳性对照组;E组加黑米;F组加黑米和熟瘦猪肉;G组加黑米和维生素C。结果表明:D、E、F、G组饲料中铁转换血红蛋白的转换效率依次为54%、31%39%和40%。铁的相对生物利用率依次为100%、47%、70%和72%。 The relative bioavailability of iron in 'Wanbao №1' black rice is studied through the recovery tests of animal hemoglobin. The rats with which anaemia model had been duplicated successfully were divided into seven groups: A, B, C, D, E, F and G. Group A, as a negative control group, is fed with basal ration; the three groups of B, C, D, as positive control groups, are fed with the basal ration added with iron (FeSO_4·7H_2o) in 6, 12, 24 mg/kg respectively; group E, basal ration plus black rice; group C, basal ration plus black and cooked lean meat; group G, basal ration plus black rice and vitamin C. Testing results show that the iron-hemoglobin conversion effeciency of group C, E, F, G is 54, 31, 39 and 40% respectively, while their relative bioavailability is 100, 47, 70 and 72% in the given order.
