摘要
概述了烟叶发酵机理、发酵工艺、微生物和酶在烟叶发酵过程中的作用研究进展。认为应强化微生物和酶的研究,以便利用微生物或酶进一步提高发酵烟叶的内在质量。
The mechanism of tobacco fermentation and the role of microorganism and enzyme in tobacco fermentation were reviewed. It was considered that the study on microorganism and enzyme should be enhanced so as to further improve the smoking quality of fermented tobacco with microorganism and enzyme.
