摘要 对野葛、粉葛中的膳食纤维进行了重点研究,运用酶解重力法测定其含量,并对膳食纤维主要组成部分——粗纤—维和木质素的含量进行测定,对葛根膳食纤维的特性进行了分析研究。结果表明,粉葛中可溶性膳食纤维(SDF含量为13.66%,不溶性膳食纤维(IDF)含量为7.21%;淀粉含量为52.87%;粗纤维含量为7.88%;木质素含量为9.05%;纤维持水性为4.36,溶胀性是2.0;纤维长度为1.87mm,宽度为0.117宽比为16∶1。野葛中SDF含量,长为39.53%,IDF含量为10.54%;淀粉含量为16.31%;粗纤维含量为14.19%;木质素含量为16.31%,纤维持水性为6.43、溶胀性是1.5纤维长度为2.41mm,宽度为;0.109mm,长宽比为22∶1。 Dietary fibers from two kinds of Radix Puerariae and Thomoson Kudzuvine were studied in this paper. The content of DF was determined with enzymatic-gravimetric method. The article also focuses on utilizing the Radix Puerariae comprehensively, including the content of starch. The results indicated that the soluble dietary fiber(SDF) content was 13.66%; the insoluble dietary fiber(IDF) was7.21%;the starch content was 52.87; the crude cellulose content was 7.88% ;the lignin content was 9.05%; water holding capacity(WHC) of fibre was 4.36, saturation water(SW) of fiber was 2.0; the length of fiber was 1.87mm,width was 0.117mm,the ratio of length to width was 16:1. In Thomson Kudzuvine the soluble dietary fiber (SDF) content was 43.23%,insoluble dietary fiber (IDF) was10.54%,the starch content was 16.31%;the crude cellulose content was 14.19%;the lignin content was 16.31%,water holding capacity (WHC) of fibre was 6.43, saturation water(SW) of fibre was 1.5; the length of fiber was 2.41mm,width was 1.109mm,the ratio of length to width was 22:1 in lobed Kudzuvine.
