摘要
辣椒红色素是一种优质天然类胡萝卜素。广泛应用于食品、医药、保健品、化妆品及嗜好品工业中。本文综述了国内外辣椒红色素研究的理化特性、提取、分离纯化、分析测定等方法及应用前景。
Capsicum red pigment is regarded as a kind of very useful nature pigment, it has used in widely food additives, medicine, health protection products and cosmetics. In this paper, the main of methods of extraction, separation, analysis and application prosperity were presented.
