论述了GABA(γ-氨基丁酸的首字母缩写)的生理活性和保健功效。介绍了用米胚芽、米糠、谷氨酸等为原料,通过酵母菌、乳酸菌、曲霉等发酵生产出GABA食品的制作实例。
Physiological activity and health function of GABA were discussed in this paper. Rice germ, rice bran and glutamic acid were used as raw materials and GABA food was made through fermentation by yeast, lactic acid bacteria and Aspergillus spp.
