摘要
对杏仁进行加速陈化试验,定期检测其主要品质指标及维生素E含量,观察高温环境下维生素E含量的变化及其对杏仁品质的影响.结果表明:维生素E的含量随着储存期的延长呈下降趋势,在储存初期,维生素E尤其是δ 生育酚对杏仁的品质有明显的保护作用.
Under accelerated storage conditions, the content changes of vitamin E in almonds and their effects on the quality of samples were studied by measuring their contents of vitamin E and primary quality indexes at regular intervals. The results indicated that the contents of vitamin E declined with time, and during the early course of storage vitamin E,especially δ-tocopherol had an obviously protective effect on the quality of almonds.
