摘要
介绍了一种国际上普遍使用的小麦粉品质检测仪器—揉混仪(Mixograph),它通过测试小麦粉面团搅拌过程中的流变学特性进而评价小麦品质。与粉质仪相比,具有测析速度快,面粉使用剂量小以及同烘焙实验相关性好等优点。在我国小麦育种、小麦粉品质检测和研发专用面粉中具有良好的应用前景。
Mixograph is a kind of instrument for evaluating wheat flour quality by determining the rheological properties of a dough during dough mixing. Compared with a farinograph, it features faster testing, less flour sample used and better correlation with a baking test. It will have excellent application prospects in the determination of wheat flour quality for the wheat breeding and flour milling industry in China.
