摘要 介绍了γ-聚谷氨酸的结构、理化性质及其用途。从国内外生产γ-聚谷氨酸的方法着手,综述了不同的合成方法以及各自的优缺点,重点介绍了微生物法合成γ-聚谷氨酸的途径,对新方法进行了展望。 The structure, physical-chemical properties and the uses of γ-polyglutamic acid were introduced. The synthetic methods were discussed, especially microbial synthesis. Finally, new methods were prospected.
