摘要 分析探讨了吕宋荚艹迷果红色素的提取条件、花色素苷含量及其理化性质.结果表明,吕宋荚艹迷果红色素的最适提取剂为酸性乙醇.100g鲜果中花色素苷含量为33.65mg.该色素属水溶性花色素苷类,适于用作天然食用色素.所得色素浸膏经纸上色谱分离和纯化后得到该色素的苷元,通过纸上色谱比较、UV和IR光谱分析,初步推导其结构可能为芍药色素. The physical and chemical properties of red pigment from Viburnum luzorunicum Rolfe fruit were analyzed, and the extraction and content were discussed as well as. The results show that the optimum extract solvent for red pigment from Viburnum luzorunicum fruit was acid-alcohol. Total anthocyanins content of 100 g fresh fruit was 33.65 mg. The pigment belongs to water soluble anthocyanins. The pigment can be used as a new natural colorant. By means of PC, UV, and IR spectra analysis, the extracted anthocyanin probably is the peonidin.
