摘要 本文阐述了肌肉的嫩化机制及宰后电刺激促进嫩化的机理,介绍了该领域的最新研究成果,并对电刺激在宰后嫩化中的应用进行了讨论。 The theories of muscle tenderization and the improving on tenderization by electrical stimulation early postmortem were described, and latest achievements were introduced, and applications of electrical stimulation early postmortem were discussed.
