摘要
对近几年来国内外有关果蔬贮藏保鲜技术的研究进展与应用成果,包括临界低温高湿保鲜、细胞间水结构化气调保鲜、电离辐射技术保鲜、高压静电场保鲜、磁场杀菌保鲜、生物技术保鲜进行概括。同时对果蔬保鲜发展方向也作了最初设想。
The advances and the applications of technology in storage and fresh-keeping of fruits and vegetables in recent years were summarized, including RS (radiation sterilization), HVEF (high voltage electrostatic field), MS (magnetic field) etc. And prospects for future developments of Fruits and Vegetables are indicated also in this paper.
