气调包装对蘑菇采后品质特性的影响 被引量:16

Effects of Modified Atmosphere Packaging on Quality Characteristics of Mushrooms During Cold Storage

摘要 采用0.04mmPE膜对蘑菇进行气调包装,以空气包装作对照,对贮藏期间在5℃条件下,袋内O2、CO2浓度的动态变化及其对蘑菇呼吸速率、成熟度(开伞率)、表面颜色、失重率、硬度、pH值、维生素C等品质特性的影响进行研究。结果表明,气调包装能有效地降低蘑菇呼吸速率,延缓成熟,抑制开伞。 Modified atmosphere packaging were used with polyethylene film(0.04mm thickness) for mushrooms. The dynamic changes of O2?CO2 concentration within MAP and the effects of MAP on the quality characteristics of mushrooms such as respiratory rate, maturity(cap opening), surface color, weight loss, flesh firmness, pH values, vitamin C at 5 ℃ were studied compared with normal air packaging. The results indicated that: 1. Lower respiratory rate, maturity, and cap opening of mushrooms were obtained with MAP.
