摘要
本文论述了山西马身猪、山西黑猪、太原花猪 SD—I 系的胴体组成、背最长肌的化学成分、肌纤维、血清生化常值和无机元素、染色体等。表明山西猪种肉质良好,针对存在的问题,应加强选育和开展杂交利用。
This paper deals with the carcuss compositions,chemical components of longissimus dorsi, muscle fibre,serum biochemical parameters,inorganic elements and chromosome etc.of Shanxi Mashen,Shanxi Black and SD—I Strain pigs.The results show that the meat quality of Shanxi pig breeds is good.To counter the present problems,selection and cross utilization should be strenghened.
