不同食物膳食纤维理化特性与消化率关系的探讨

摘要 本文测定了苹果、麦麸、卷心菜、胡萝卜和梨5种食物的中性洗涤剂纤维、酸性洗涤剂纤维、纤维素、半纤维素和木质素含量,研究了它们增加粪便干重的作用及消化率的变化。结果表明,饲料中2.5%的中性洗涤剂纤维使粪便干重比对照组平均增加1倍。个体变化分析发现粪便干重主要受中性洗涤剂纤维摄入量的影响。5种食物中以胡萝卜的膳食纤维各成份消化率较高。食物的半纤维素消化率平均为纤维素的1.3倍。食物的木质素对膳食纤维降解有不同程度的影响;半纤维素可能对纤维素的消化也有阻滞作用。此外,食物和膳食纤维的物理和生物学特性也与膳食纤维的消化有关。 5 kinds of foods were fed to rats as part of 5 diets each contanning 2.5% neutral detergent fiber(NDF)and the effect on increasing dry stool weight (DSW)and the digestibility of dietary fiber(DF)components of the foods were studied.The results showed that DSW increased with increased NDF intake, cabbage being the most effective.The mean DSW was 2 times compared with non-fiberous controls.The DSW was correlated with intake of NDF and cellulose from analysis of individual variation.The digestion of DF components from carrot was most complete,while hemicellulose was 1.3 times as digestible as cellulose.Lignin was found to have an influence on DF breakdown.Increasing hemicellulose level might decrease the digestibility of cellulose.The variation of DF digestibility from different food may also be ascribed to the Physical or biological properties of the food.
