摘要
着重研究碱性蛋白酶在pH值、水解时间、液固比、添加量不同因素条件下对碎米蛋白提取率的影响。正交试验结果表明:pH值10、水解时间8h、液固比10∶1、酶的添加量24%时碎米蛋白提取率高达78.12%。
The influence of different conditions on protein yield from broken rice were researched at different factors such as ph, content of alkali proteinase, hydrolization time and liquid-to-solid ratio. The orthogonal experiment showed that the protein yield was 78.12% on such conditions that pH was 10, hydrolization time 8 h, content of alkali prpoteinase 24% and liquid-to-solid ratio 10∶1.
