电解氧化水的杀菌效果及其在食品生产和食具消毒中的应用研究 被引量:13

摘要 目的 检测电解氧化水的杀菌能力和实际应用效果。方法 采用消毒产品鉴定与监测实验技术规范中的实验方法做了各种试验 ,包括实验室条件下电解氧化水对大肠杆菌、金黄色葡萄球菌、枯草杆菌黑色变种芽胞、黄曲霉、岛青霉、串珠镰刀菌等细菌和霉菌的杀菌效果 ;电解氧化水对纯净水包装瓶、食具以及纯净水厂和保健食品厂机械表面和操作人员双手的消毒效果。结果 在实验室条件下 ,电解氧化水可在 30s内 1 0 0 %杀灭浓度为 1 0 6CFU/ml的大肠杆菌和金黄色葡萄球菌 ;30min内99 99%杀灭相同浓度的枯草杆菌黑色变种芽胞 ;5min内 1 0 0 %杀灭浓度为 1 0 5CFU/ml的黄曲霉、岛青霉、串珠镰刀菌等霉菌。用电解氧化水浸泡 1 8 9L纯净水包装瓶 2min ,对其中污染的细菌和真菌的杀灭率分别为 99 97%和 99 88% ;浸泡食具 5min ,可 1 0 0 %杀灭其大肠菌群 ;应用于纯净水厂和保健食品厂机械表面和操作人员双手的消毒 ,细菌和霉菌的杀灭率均达到 93 84 %以上。结论 电解氧化水具有高效的杀菌能力 ,适用于食品生产和食具的消毒。 Objective To study the microbicidal effects of electrolyzed oxidizing water(EOW) and its application on disinfection of food manufacture and utensil. Methods E.coli, S.aureus , B.subtis , A.flavus , P.islandicum and F.moniliforme were tested by standard methods to determine the microbicided effects. Utensils and purified water bottle(PWB),the apparatus surfaces and worker's hands in purified water factories and health food processing factories were tested to identify the disinfection effects. Results Bactericidal rates of Eow were 100% for E.coli and S.aureus (10 6CFU/ml) with in 30sec.,99.99% for B.subtis(10 6CFU/ml) with in 30 min. ,100% for A.flavus , P.islandicum , and F.moniliforme(10 5CFU/ml) with in 5 min.After the 18.9L PWB treated with EOW for 2 min.the steriliznq rates wtre and 99.97% for contaminated bacteria and 99.88% for fungi,For utensils,the sterilizing rate of coliform bacteria was 100% treatea with EOW for 5 min.The disinfection rate for bacteria and fungi on the apparatus surfaces and worker's hands in purified water factories and food processing factories was 93.84%. Conclusion EOW was a high effective disinfectant and can be applied on the disinfection of utensil and food processing.
