摘要
利用大豆植物蛋白,加入酸奶,强化乳糖,达到酸奶中动物性营养与植物性营养互补。本文介绍了保鲜植物酸奶的生产工艺,对杀菌、保鲜作出具体说明。
The author put sour milk in soybean, then strengthened with lactose inor der to make the animal and plant nutritive matter complement. In this paper, the technique was introduced, the methods of sterilization and preservation were illustrated.
