摘要
用分光光度法和氧电极法分别对细菌的生长和酵母菌的呼吸作用进行了测定,以探讨富马酸二甲酯(DMF)的抑菌效果、影响因素和抑菌机理。结果表明,DMF对革兰氏阴性菌和革兰氏阳性菌均有显著的抑制作用。微生物在生长迟滞期对DMF极为敏感,而在对数期和稳定期则敏感性下降。对微生物呼吸代谢动力学的研究结果表明,DMF主要是通过抑制微生物的三羧酸循环而发挥抗菌作用。对烷烯基酸酯类的抗菌效果的比较研究表明,α,β—不饱和结构是这类物质表现抗菌活性的重要结构特征。
The antimicrobial activity of dimethyl fumarate(DMF)against Eschericheae coli, Staphylococcus aureus and Saccha-romgces cerevisiae was determined in culture medium. An excellent effect was observed, which may be due to its a, β-unsaturated organic acid structure. Both Gram-negative and Gram-positive bacteria were inhibited by DMF. A better growth inhibition by DMF was observed at the initial phase than at other phases. DMF has lower stability to heating. But little influence will be made by pH levels. The result of respiration experiment suggests that DMF exert its inhibitory action at the tricarboxylic acid cycle mainly.
