摘要 为探明一株G-短杆菌红色素的应用价值,对自松乳菇子实体中分离的该G-红色细菌种属与红色素特性进行了研究.结果表明:该细菌初步鉴定属沙雷氏菌属,其所产红色素包含水可溶及有机溶剂可溶两种组分;该色素不属于黄酮类物质,不同于胡萝卜素,可能属类胡萝卜素衍生物;该红色素可耐短时高温处理,对紫外线、还原剂以及对酸均较稳定,但易被氧化剂,Fe3+及Cu2+,散射光所破坏.该色素的变色pH域为8.68~9.94. The properties of red pigment obtained from a strain G- bacterium,whose genus identified and isolated from seed purification of Lactarius deliciosus Gray sporocarp tissue culture,were studied in this paper.According to the study, the strain G- bacterium belongs to Serratia and the red pigment produced contain two components,including soluble in water and organic solvent.The red pigment was supposed to be carotenoid-derivatives,but not flavon or carotene.It was stable to uv,reductant,acid and shorter period for high temperature treatment,but was easily degraded by oxidant,Fe3+ and Cu2+,scattering light.Its’ color transition pH domain sets in 8.68 to 9.94.
