泰安市30种原粮中11种元素测定 被引量:1

摘要 为探讨各种粮食中常量与微量元素的含量,对泰安农贸市场26种原粮,4种粮店供应粮,用M_(3100)原子吸收分光光度计火焰法,进行了11种元素测定。结果显示,30种原粮中各种元素的含量有很大差异,钾的含量普遍较高,钙的含量差别较大,谷类含钙普遍较低,豆类含钙丰富,芝麻含钙量最高;铁的含量变动较大,市场黑芝麻和市场红谷粘米含铁量最高,各种豆类含铁量普遍较高,锌的含量比较均衡,以市场长粒糯米含锌量最高。文中分析了目前我国人民体内和膳食中缺钙、缺铁、缺锌的原因,与人们的膳食结构单一有关。提倡粗细粮搭配食用的混合膳食,多食杂粮对提高常量与微量元素的摄入大有益处。 In order to detect the content of common and trace elements in grain, eleven elements were measured in 26 kinds of grains from trade market and 4 kinds from public grain store with M 3100 atomic absorption spectrometer. We found that element content varied greatly amorg these grains. The calcium content is low in cereals but high in legumes, and the highest is in sesame. Legumes has a higher iron content black sesame and red millet from market has the highest. The content of zinc in grains has little difference, but the long glutinous rice has the highest. This paper has analysed the causse of body deficiency and in adequate food supply of calcium, iron and zinc in domestic people. It suggests that eating vegetables, coarse grains as staple food will be good for the in take of common and trace elements.
